“I had a knee operation that put me out of kilter for a bit,” says Pam Singh, owner of Pam’s Roti Shop. “When I was back in action I reopened and all of my old customers found me. That puts a smile on my face.”
It’s not surprising that customers who had already loyally followed Pam from shop to shop as she moved locations would seek her out after her hiatus from preparing her rotis and rice dishes. Fans say her food is delicious with the fluffy, light rotis in particular a big hit. “I started out years ago serving my traditional food and hamburgers,” says Pam. “But my cuisine was more popular than the burgers so I thought maybe there was something in it – that maybe I should stick to Caribbean food.”
